Cookie Sheet Chicken and Veggies

Im a one-pan, meal loving queen! No mess or very little mess is a blessing.  This cookie sheet Chicken and Veggie Dinner super easy, flavorful, and delicious.

Ingredients

  1. 2 carrots, sliced in half
  2. 2 Red bell peppers sliced in half or quartered
  3. 1 Green & 1 yellow bell pepper, sliced in half or quartered
  4. 1 yellow onion, sliced thinly
  5. 4 garlic cloves, crushed
  6. 2 lb. boneless chicken breast cut up
  7. 4-6 tablespoons extra-virgin olive oil

Spice Mix

  1. 1 teaspoon cumin
  2. 1 teaspoon garlic
  3. 1 teaspoon onion powder
  4. 1 1/2 teaspoon paprika
  5. 1/4 teaspoon honey
  6. 2 teaspoon Italian season
  7. Pinch cayenne pepper
  8. 2 tablespoons Balsamic vinegar
  9. 1 teaspoon salt (more to taste)
  10. 1 teaspoon pepper (more to taste)

Instructions

  1. Preheat oven to 400°F
  2. In a bowl combine all chopped veggies and garlic
  3. Add in sliced up chicken breasts
  4. Pour oil and spices over veggie and chicken mixture and coat evenly.
  5. Place on a lined baking sheet and bake for 22-32 minutes until chicken is fully cooked through
  6. Add additional salt and pepper as desired

Adjust oil based on how much veggies you have. You want the veggie chicken mixture well-coated

Use any other veggies you have on hand.
